    Caramelize the Onions

    In a large skillet, melt the butter over medium heat. Add the sliced onions and cook, stirring frequently, until they are soft and golden brown, about 15-20 minutes. Set aside.

    Prepare the Hoagies

    Slice the hoagie rolls lengthwise. Layer the bottom half with corned beef, followed by a generous portion of caramelized onions and top with Swiss cheese.

    Place the hoagie rolls in a preheated oven at 350°F (175°C) for about 5-7 minutes or until the cheese is melted and the bread is slightly toasted.

    Spread the garlic chipotle mayo generously on the top half of the hoagie rolls.

    Close the hoagie rolls and cut them in half for easier serving.
