Prepare the Bacon
In a skillet over medium heat, cook the hickory smoked bacon until crispy. Remove and drain on paper towels.

Form the Patties
In a bowl, combine the ground beef with salt and black pepper. Form into two equal patties.

Cook the Patties
In the same skillet, cook the patties over medium-high heat for about 4-5 minutes per side, or until they reach your desired doneness.

Add the Cheese
In the last minute of cooking, place a slice of American cheese on each patty and cover to melt.

Prepare the BBQ Sauce
In a small saucepan, combine 1 cup of Guinness beer, 1 cup of BBQ sauce, and 1 tsp of mesquite seasoning. Simmer until thickened.

Assemble the Burgers
Toast the burger buns lightly. On each bun, layer the patty with melted cheese, crispy bacon, and drizzle with the smoky mesquite Guinness BBQ sauce. Top with the other half of the bun.
