Caramelize the Onions
In a skillet over medium heat, melt 1 tablespoon of butter. Add sliced onions and cook, stirring occasionally, until they are golden brown and caramelized, about 15-20 minutes. Remove from the skillet and set aside.

Fry the Bologna
In the same skillet, add the remaining tablespoon of butter. Once melted, add the bologna slices and fry until they are browned and crispy on both sides, about 3-4 minutes per side.

Melt the Cheese
Place a slice of cheddar cheese on top of each bologna slice during the last minute of frying, cover the skillet with a lid to help the cheese melt.

Assemble the Sandwich
On one slice of grilled sourdough, layer the lettuce leaves, followed by the fried bologna with melted cheese, and top with caramelized onions. Close the sandwich with another slice of grilled sourdough.
