Prepare the Batter
In a bowl, mix the flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer until the batter is smooth.

Heat the Oil
In a deep frying pan, heat the oil over medium-high heat until it's hot enough for frying.

Batter the Haddock
Dip each haddock fillet into the batter, ensuring it is fully coated.

Fry the Fish
Carefully place the battered haddock into the hot oil. Fry for about 4-5 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.

Assemble the Sandwich
On the bottom half of each brioche bun, place a lettuce leaf, then the fried haddock, followed by a slice of tomato. Top with the other half of the bun.
