    Prepare the Marinade

    In a bowl, combine olive oil, minced garlic, lemon juice, chopped rosemary, chopped thyme, salt, and black pepper. Mix well.

    Marinate the Chicken

    Place the whole chicken in a large resealable bag or a deep dish. Pour the marinade over the chicken, ensuring it’s well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight.

    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Prepare the Vegetables

    In a large bowl, toss the sliced red bell peppers, zucchini, artichoke hearts, and Kalamata olives together. Drizzle with a little olive oil and season with salt and pepper.

    Roasting

    Place the marinated chicken in a large roasting pan. Surround it with the prepared vegetables. Roast in the preheated oven for about 1 hour and 15 minutes, or until the chicken is cooked through and juices run clear when pierced.
