Cooking Instructions

- 2
Marinate the Chicken
Place the whole chicken in a large resealable bag or a deep dish. Pour the marinade over the chicken, ensuring it’s well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight.
- 3
Preheat the Oven
Preheat your oven to 375°F (190°C).
- 4
Prepare the Vegetables
In a large bowl, toss the sliced red bell peppers, zucchini, artichoke hearts, and Kalamata olives together. Drizzle with a little olive oil and season with salt and pepper.
- 5
Roasting
Place the marinated chicken in a large roasting pan. Surround it with the prepared vegetables. Roast in the preheated oven for about 1 hour and 15 minutes, or until the chicken is cooked through and juices run clear when pierced.
- 6
Add Feta
During the last 10 minutes of roasting, sprinkle the crumbled feta cheese over the chicken and vegetables.
- 7
Rest and Serve
Once cooked, remove the chicken from the oven and let it rest for 10 minutes before carving. Serve the chicken on a platter surrounded by the roasted vegetables.
