Marinate the Chicken
In a large bowl, whisk together olive oil, red wine vinegar, lemon juice, minced garlic, chopped rosemary, chopped oregano, salt, and black pepper. Add the chicken thighs to the marinade, ensuring they are fully coated. Cover with plastic wrap and refrigerate for 24 hours.

Grill the Chicken
Remove the chicken from the marinade and let any excess marinade drip off. Place the chicken on the grill, skin-side down, and cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). If using a smoker, smoke the chicken at 225°F (107°C) for about 1.5 to 2 hours.

Rest and Serve
Once cooked, remove the chicken from the grill and let it rest for 5-10 minutes before serving. Serve hot with your favorite sides.
