Carol's Maryland Tater Salad is a creamy blend of tender potatoes, crisp celery, and zesty seasonings, making it the perfect side dish for any gathering.
Place the potatoes in a large pot of salted water. Bring to a boil and cook until tender, about 15-20 minutes. Drain and let cool.
Once the potatoes are cool, peel and chop them into bite-sized pieces. In a large bowl, combine the chopped potatoes, diced celery, diced red onion, and chopped hard-boiled eggs.
In a separate bowl, whisk together the mayonnaise, mustard, apple cider vinegar, salt, and black pepper until well combined.
Pour the dressing over the potato mixture and gently fold until everything is evenly coated. Adjust seasoning if necessary.
