Preparation and Cooking

    Prepare the Brisket

    Trim excess fat from the brisket and rub with the spice mixture. Let it sit at room temperature for about 30 minutes.

    Smoke the Brisket

    Preheat your smoker to 225°F (107°C). Place the brisket in the smoker and smoke for about 6 hours, or until it reaches an internal temperature of 165°F (74°C).

    Wrap and Continue Smoking

    Wrap the brisket in butcher paper and return it to the smoker. Continue smoking for an additional 2-4 hours until the internal temperature reaches 203°F (95°C).

    Rest the Brisket

    Remove the brisket from the smoker and let it rest for at least 30 minutes before slicing.

    Prepare Burnt Ends

    Cut the smoked brisket into cubes and place them in a pan. Toss with your favorite barbecue sauce and return to the smoker for an additional 1 hour.

    Serve

    Remove the burnt ends from the smoker, let them cool slightly, and serve warm.
