Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips, about 1/4 inch thick.

Soak the Potatoes
Place the cut potatoes in a large bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch for crispier fries.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). You can use a thermometer for accuracy.

Dry the Potatoes
After soaking, drain the potatoes and pat them dry with paper towels to remove excess moisture.

Carefully add a batch of the dried potato strips to the hot oil. Fry them for about 5-7 minutes or until they are golden brown and crispy. Do not overcrowd the pot.
