Prep the Brisket
Season the brisket with salt and pepper. Heat a griddle or skillet over medium-high heat and sear the brisket for about 4-5 minutes on each side until a nice crust forms. Cook until the internal temperature reaches at least 190°F (88°C) for tender brisket. Remove from heat and let it rest.

Prepare the Sandwich
While the brisket is resting, butter one side of each slice of bread. On the unbuttered side, spread a tablespoon of horseradish sauce on each slice. Thinly slice the rested brisket and layer it on two of the slices.

Assemble
Top the brisket with pickled red onions, then place the other slice of bread on top, buttered side up.

Griddle the Sandwich
Return the sandwich to the hot griddle. Cook for about 3-4 minutes on each side or until the bread is golden brown and crispy, and the sandwich is heated through.
