Prepare the Ribs
Remove the membrane from the back of the ribs and rinse them under cold water. Pat dry with paper towels.

Make the Dry Rub
In a bowl, combine salt, black pepper, paprika, brown sugar, garlic powder, onion powder, and cayenne pepper. Mix well.

Season the Ribs
Rub the dry mixture generously over both sides of the ribs. Allow the ribs to sit at room temperature for about 30 minutes to absorb the flavors.

Preheat the Grill or Oven
If using a grill, preheat it to medium heat (about 300°F). If using an oven, preheat it to 300°F.

Cook the Ribs
Place the ribs on the grill or in a baking dish if using the oven. Cook for 2.5 to 3 hours, flipping them halfway through, until they are tender.

Apply Barbecue Sauce (Optional)
If desired, brush barbecue sauce on the ribs during the last 30 minutes of cooking for a wet style.

Rest and Serve
Remove the ribs from the heat and let them rest for 10 minutes before slicing. Serve with additional barbecue sauce if desired.
