    Prepare the Greens

    Thoroughly wash and chop the collard and mustard greens. Remove any tough stems.

    Sauté Aromatics

    In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Add the minced garlic and sauté for an additional minute, until fragrant.

    Cook the Greens

    Add the chopped greens to the pot and stir well to combine with the onion and garlic mixture. Pour in the vegetable broth and bring to a simmer.

    Add the apple cider vinegar, red pepper flakes, salt, and black pepper to taste. Cover the pot and let the greens simmer for about 30 minutes, stirring occasionally, until they are tender.
