Cooking Instructions
- 1
Prepare the Chicken
Preheat your oven to 425°F (220°C). Rinse the chicken under cold water and pat it dry with paper towels. Place it in a large roasting pan.
- 2
Make the Marinade
In a bowl, combine olive oil, minced garlic, chopped rosemary, lemon zest, lemon juice, salt, black pepper, paprika, and red pepper flakes. Mix well.
- 3
Marinate the Chicken
Rub the marinade all over the chicken, making sure to get under the skin and inside the cavity. Allow it to marinate for at least 30 minutes (or up to overnight in the refrigerator for best flavor).
- 4
Add Vegetables
Arrange the halved cherry tomatoes, sliced olives, and capers around the chicken in the roasting pan.
- 5
Roast the Chicken
Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C) and the juices run clear. Baste the chicken with the pan juices halfway through cooking.
- 6
Rest and Serve
Once cooked, remove the chicken from the oven and let it rest for 10-15 minutes before carving. Serve with the roasted vegetables and enjoy!
