    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into even strips, about 1/4 inch thick.

    Soak the Potatoes

    Place the cut potatoes in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

    Drain and Dry

    After soaking, drain the potatoes and pat them dry with a clean kitchen towel or paper towels.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Carefully add a batch of the dried potato strips to the hot oil. Fry for about 5-7 minutes or until they are golden brown and crispy.

    Drain and Season

    Remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil. While still hot, season with salt, pepper, and any optional seasonings.
