    Prepare the Pinto Beans

    Rinse the pinto beans under cold water. If using dry beans, soak them overnight in water. Drain and rinse before cooking.

    Cook the Beans

    In a large pot, add the soaked pinto beans and 4 cups of water. Bring to a boil, then reduce heat to a simmer and cover. Cook for about 1 to 1.5 hours or until beans are tender.

    Cook the Rice

    In a separate pot, heat 1 tablespoon of olive oil over medium heat. Add the rice and stir for a few minutes until slightly toasted. Add 2 cups of water, salt, and bring to a boil. Reduce heat to low, cover, and cook for 15-20 minutes until the rice is tender and water is absorbed.

    Sauté the Aromatics

    In a skillet, heat the remaining tablespoon of olive oil over medium heat. Add chopped onion and cook until translucent, about 5 minutes. Add minced garlic and cumin, sauté for another minute.

    Combine and Serve

    Once the beans are cooked, drain any excess water and mix them with the sautéed onions and garlic. Serve the pinto beans over a bed of rice, and garnish with chopped cilantro.
