Prepare the Chicken
Preheat your oven to 400°F (200°C). In a small bowl, mix the olive oil, minced garlic, lemon juice, dried oregano, salt, and black pepper. Rub this mixture all over the chicken halves, ensuring they are well coated.

Place the chicken halves in a roasting pan, skin side up. Roast in the preheated oven for about 45-50 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

While the chicken is roasting, toss the cherry tomatoes and sliced red onion together in a bowl with a drizzle of olive oil, salt, and pepper.

In the last 15 minutes of cooking, add the prepared cherry tomatoes and red onion around the chicken in the roasting pan.

Once the chicken is done, remove it from the oven and let it rest for 5-10 minutes. Serve the chicken halves on a platter with the roasted cherry tomatoes and red onion, garnished with fresh basil leaves.
