Prepare the Bones
Rinse the beef bones under cold water to remove any residue.

Boil the Bones
In a large pot, add the beef bones and cover them with water. Bring to a boil over high heat.

Once boiling, reduce the heat to a simmer and add salt, peppercorns, bay leaves, and thyme.

Cover the pot and let it simmer for at least 2 hours, or until the bones have released their flavor into the broth.
