Preparation and Cooking

    Marinate the Chicken

    In a mixing bowl, combine peanut butter, soy sauce, coconut milk, lime juice, minced garlic, grated ginger, and chili powder. Mix well until smooth. Add the cubed chicken and toss to coat. Cover and refrigerate for at least 1 hour, preferably overnight.

    Prepare the Skewers

    If using wooden skewers, soak them in water for 30 minutes to prevent burning. Preheat your grill or grill pan over medium heat.

    Assemble the Satay

    Thread the marinated chicken cubes onto the skewers, leaving a little space between each piece.

    Place the skewers on the preheated grill. Cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. Season with salt and pepper to taste.
