    Soak the rice noodles in warm water for about 30 minutes or until they are soft. Drain and set aside.

    In a large pan or wok, heat the vegetable oil over medium heat. Add the minced garlic and stir-fry for about 30 seconds until fragrant. Add the cubed tofu and cook until golden brown.

    Push the tofu to one side of the pan, crack the eggs into the pan, and scramble them until fully cooked. Mix them with the tofu.

    Add the soaked noodles to the pan along with fish sauce, sugar, and chili powder. Stir-fry everything together for 3-4 minutes until the noodles are heated through.

    Add the bean sprouts and green onions, tossing everything together for another 2 minutes. Remove from heat.

    Serve the Phad Thaï hot, topped with crushed peanuts and lime wedges on the side.
