    Prepare the Rice

    Rinse the Jasmine rice under cold water until the water runs clear. In a saucepan, combine the rice with 2 cups of water. Bring to a boil, reduce heat to low, cover, and simmer for about 15-20 minutes until the rice is cooked and water is absorbed. Remove from heat and let it sit covered for 5 minutes.

    Cook the Tofu

    While the rice is cooking, press the firm tofu to remove excess moisture. Cut the tofu into cubes. In a non-stick skillet, add a little oil over medium heat and sauté the tofu until golden brown on all sides. Remove from the skillet and set aside.

    Make the Curry

    In the same skillet, add the red curry paste and sauté for 1-2 minutes until fragrant. Pour in the coconut milk and vegetable broth, stirring to combine. Bring to a gentle simmer.

    Add Vegetables

    Add the sliced bell pepper, carrot, and green beans to the curry mixture. Simmer for about 5-7 minutes until the vegetables are tender.

    Combine Tofu and Season

    Return the sautéed tofu to the skillet. Add soy sauce, lime juice, salt, and pepper to taste. Stir gently to combine everything and heat through for another 2-3 minutes.

    Fluff the cooked rice with a fork and serve the tofu and curry mixture over the rice. Garnish with fresh basil before serving.
