Prepare Sushi Rice

    Cook the Rice

    Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker or pot. Cook according to the rice cooker instructions or bring to a boil, then reduce heat to low, cover, and cook for 18-20 minutes.

    In a small saucepan, heat the rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Allow to cool to room temperature.

Prepare Katsu Shrimp

    Bread the Shrimp

    Season the shrimp with salt and pepper. Dredge each shrimp in flour, dip in beaten egg, and coat with panko breadcrumbs.

    Heat oil in a deep frying pan over medium-high heat. Fry the breaded shrimp in batches until golden brown and cooked through, about 2-3 minutes per side. Drain on paper towels.

Assemble the Poké
