Preparation of Noodles

    Soak the Noodles

    Soak rice noodles in warm water for about 30 minutes or until soft. Drain and set aside.

Cooking the Phad Thaï

    In a small bowl, mix tamarind paste, fish sauce, palm sugar, and chili powder until combined.

    Cook Tofu

    Heat vegetable oil in a large pan over medium heat. Add cubed tofu and fry until golden brown. Remove and set aside.

    Scramble the Eggs

    In the same pan, crack the eggs and scramble until just set. Push to one side of the pan.

    Add the soaked noodles and sauce mixture to the pan. Toss everything together, adding tofu, bean sprouts, and green onions. Stir-fry for 2-3 minutes.
