    In a large mixing bowl, combine the ground pork, chopped shrimp, soaked and chopped wood ear mushrooms, grated carrot, finely chopped onion, minced garlic, fish sauce, black pepper, and sugar. Mix well until all ingredients are thoroughly combined.

    Wrap the Spring Rolls

    Take a rice paper wrapper and dip it in warm water until it becomes pliable. Place a spoonful of the filling in the center of the wrapper, fold in the sides, and roll tightly to enclose the filling. Repeat with remaining wrappers and filling.

    Fry the Spring Rolls

    In a deep frying pan or wok, heat vegetable oil over medium heat. Once hot, carefully add the spring rolls in batches, frying until golden brown and crispy (about 4-5 minutes). Drain on paper towels.
