Prepare the Vermicelli Noodles
Boil water in a pot and add the rice vermicelli noodles. Cook for about 3-4 minutes, or until soft. Drain and rinse under cold water to stop cooking. Set aside.

Soften the Rice Paper Wrappers
Fill a large bowl with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds, until soft. Remove and lay it flat on a clean surface.

Assemble the Gỏi Cuốn
On the softened rice paper, place a few pieces of cooked shrimp, a small amount of rice vermicelli noodles, a few mint and cilantro leaves, a piece of lettuce, and some julienned cucumber and carrot. Fold the sides of the rice paper over the filling, then roll it tightly from the bottom to the top.

Serve
Repeat the process with the remaining ingredients. Serve the Gỏi Cuốn with peanut dipping sauce on the side.
