Preparation Steps

  1. 1

    Prepare the Noodles

Soak the rice vermicelli noodles in hot water for about 10 minutes until tender. Drain and set aside.

  2. 2

    Prepare the Vegetables

Julienne the carrot and cucumber into thin strips. Rinse the lettuce leaves, mint, and cilantro under cold water and pat dry.

  3. 3

    Soften the Rice Paper

Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until soft and pliable.

  4. 4

    Assemble the Rolls

Place the softened rice paper on a clean surface. In the center, layer some vermicelli noodles, lettuce, mint, cilantro, carrot, cucumber, and a cooked shrimp. Fold the sides over the filling and roll tightly from the bottom up.

  5. 5

    Repeat

Continue this process until all ingredients are used. Arrange the rolls on a platter.
