    Rinse the jasmine rice under cold water until the water runs clear. Combine the rice, coconut milk, and vegetable broth in a pot. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and liquid is absorbed.

    While the rice is cooking, drain and press the tofu to remove excess moisture. Cut the tofu into cubes. Heat the cooking oil in a large skillet over medium-high heat. Add the tofu cubes and cook until golden brown, about 5-7 minutes. Remove the tofu from the skillet and set aside.
