    Prepare the Filling

    In a large mixing bowl, combine ground pork, grated carrot, chopped shiitake mushrooms, bean sprouts, minced garlic, and chopped onion. Season the mixture with fish sauce, black pepper, and salt. Mix well until all ingredients are evenly combined.

    Soak the Rice Paper

    Fill a shallow dish with warm water. Dip one rice paper wrapper in the water for about 10-15 seconds until it becomes soft and pliable. Carefully remove and lay it flat on a clean surface.

    Assemble the Rolls

    Place about 2 tablespoons of the filling near the bottom edge of the rice paper. Fold the sides over the filling and then roll it tightly from the bottom to the top, creating a cylinder shape. Repeat this process for all wrappers and filling.

Frying

    Fry the Rolls

    Heat vegetable oil in a deep frying pan over medium-high heat. Once the oil is hot, carefully add the rolls in batches, frying until they are golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels.
