Method
Pancake Preparation
- 1
Prepare the Batter
In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt. In another bowl, combine the milk, egg, and melted butter. Pour the wet ingredients into the dry ingredients and stir until just combined. If you're making blueberry pancakes, gently fold in the blueberries.
- 2
Cook the Pancakes
Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or oil. Pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, then flip and cook until golden brown, about 2-3 minutes per side.
- 3
Prepare the Bacon (if using)
While the pancakes are cooking, cook the bacon in a separate skillet over medium heat until crispy. Drain on paper towels.
- 4
Serve
Stack the pancakes on a plate, serve with whipped cream, maple syrup, and fresh berries on top. Add the cooked bacon on the side.
