Prepare the Sweet Maple Mayo Sauce
In a small bowl, whisk together the mayonnaise and maple syrup until well combined. Set aside.

Make the Pancake Batter
In a large mixing bowl, combine flour, baking powder, sugar, and salt. In a separate bowl, whisk together the milk and egg. Pour the wet ingredients into the dry ingredients and stir until just combined.

Preheat the Oil
In a deep saucepan or fryer, heat vegetable oil to 350°F (180°C). Make sure there is enough oil to submerge the sausage links.

Dip and Fry the Sausages
Insert a skewer into each sausage link. Dip each sausage into the pancake batter, making sure it is evenly coated. Carefully place the battered sausages into the hot oil and fry until golden brown, about 3-4 minutes. Remove and drain on paper towels.

Serve the pancake corndogs hot with the sweet maple mayo sauce on the side for dipping.
