1. Prep the Potatoes
Wash and peel the russet potatoes. Cut them into thin, spiral shapes using a spiralizer or a knife. Aim for a thickness of about 1/4 inch.
2. Soak the Potatoes
Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes. This helps remove excess starch and makes the fries crispier.
3. Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.
4. Fry the Potatoes
Drain and pat the potatoes dry with a paper towel. Carefully add a handful of fries to the hot oil, making sure not to overcrowd the pot. Fry until golden brown, about 3-5 minutes.
5. Season the Fries
Remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil. While still hot, sprinkle with salt, paprika, garlic powder, and black pepper. Toss to coat evenly.
6. Serve
If desired, sprinkle with Parmesan cheese and garnish with chopped fresh parsley. Serve immediately while hot.
