To Prepare the Birria

    Prepare the Chiles

    Remove stems and seeds from the guajillo and ancho chiles. Soak them in hot water for about 15 minutes until softened.

    Make the Marinade

    In a blender, combine the soaked chiles, garlic, onion, cumin, oregano, black pepper, salt, and lime juice. Blend until smooth.

    Cook the Meat

    In a large pot, combine the chuck roast, beef broth, bay leaves, and the blended marinade. Bring to a boil, then reduce heat and simmer for about 2-3 hours, or until the meat is tender.

    Shred the Meat

    Once the meat is cooked, remove it from the pot and shred it using two forks. Reserve the broth.

    Make the Quesa Birria Tacos

    Heat a skillet over medium heat. Dip a corn tortilla in the reserved broth, then place it in the skillet. Add some shredded meat and sprinkle cheese on top. Fold the tortilla and cook until crispy and the cheese has melted. Repeat with remaining tortillas.
