Prepare Sweet Potatoes
Peel and chop the sweet potatoes into small pieces. Boil them in salted water until tender, about 15 minutes. Drain and let cool.

Make Tots Mixture
In a large bowl, mash the boiled sweet potatoes. Add flour, cornstarch, egg, salt, black pepper, and smoked paprika. Mix until well combined.

Preheat the oven to 400°F (200°C). Form the sweet potato mixture into small bite-sized balls or tots and place them on a baking sheet lined with parchment paper.

Cook Pancetta
In a skillet, cook the pancetta lardons over medium heat until crispy. Remove and drain on paper towels.

Bake the sweet potato tots in the preheated oven for 20-25 minutes or until golden brown and crispy.

In a small bowl, combine the maple syrup and whipped cream. Mix until smooth.
