Directions
- 1
Prepare the Shrimp
In a bowl, season the colossal shrimp with salt and pepper. Let them marinate for about 15 minutes.
- 2
Setup Breading Station
Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with a mixture of shredded coconut and sesame seeds.
- 3
Bread the Shrimp
Dip each shrimp into the flour, shaking off excess, then into the beaten eggs, and finally coat them in the coconut-sesame mixture. Press lightly to ensure the coating sticks.
- 4
Fry the Shrimp
In a large skillet or deep fryer, heat the oil over medium-high heat. Once hot, fry the shrimp in batches until golden brown, about 2-3 minutes per side. Drain on paper towels.
- 5
Prepare the Mint Sauce
In a small bowl, mix the diced pickled peppers with chopped mint and coconut milk. Stir well to combine.
- 6
Serve
Serve the fried shrimp hot with the pickled pepper and mint sauce on the side.
