Preparation Instructions
Marinate the Shrimp
In a bowl, combine the raw shrimp and lime juice. Ensure the shrimp is fully submerged in the juice. Cover and refrigerate for about 30 minutes, or until shrimp is opaque and fully cooked from the acid.
Prepare the Pickled Fresnos
In a small bowl, mix the sliced Fresno chilies with a pinch of salt and lime juice. Set aside to marinate while the shrimp is cooking.
Make the Avocado Crema
In a blender, combine the avocado, sour cream, and a pinch of salt. Blend until smooth and creamy. Adjust seasoning as needed.
Combine Ingredients
Once the shrimp is ready, drain any excess lime juice. In a large bowl, combine the shrimp, cucumber slices, chopped cilantro, mint, and basil. Gently toss to combine.
Serve
To serve, place the ceviche mixture in a serving bowl, top with pickled Fresnos, and drizzle with avocado crema. Garnish with additional mint and basil if desired.
