Cooking Instructions
- 1
Prepare the Asparagus
Preheat your oven to 400°F (200°C). Toss the asparagus with olive oil, salt, and pepper. Spread them evenly on a baking sheet and roast in the oven for about 12-15 minutes or until tender and slightly charred.
- 2
Cook the Filet
While the asparagus is roasting, season the Black Angus filet with salt and black pepper. Heat a skillet over medium-high heat and add a drizzle of olive oil. Sear the filet for about 4-5 minutes on each side for medium-rare, or until your desired doneness is reached. Remove from heat and let it rest for a few minutes.
- 3
Prepare the Toppings
In a separate pan, gently warm the blue crab meat and smoked cherry tomatoes over low heat until heated through. Be careful not to overcook the crab.
- 4
Assemble the Dish
On a serving plate, place the roasted asparagus. Top with the filet, then add the blue crab meat and smoked cherry tomatoes. Drizzle with bearnaise sauce.
