Prepare the Pork
Cut the pork tenderloin into small cubes, about 1-inch in size.

Combine Ingredients
In a large mixing bowl, combine the chopped onion, dill pickles, spicy mustard, flour, cornstarch, baking powder, salt, and black pepper. Mix well.

Incorporate Pork
Gently fold in the cubed pork into the batter until all pieces are coated.

Heat the Oil
In a large heavy pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Fritters
Using a spoon or small ice cream scoop, carefully drop spoonfuls of the batter-coated pork into the hot oil. Fry in batches, ensuring not to overcrowd the pot.

Cook Until Golden
Fry for about 4-5 minutes or until golden brown and cooked through. Remove with a slotted spoon and drain on paper towels.

Serve hot with extra spicy mustard on the side for dipping.
