Preparation

Prepare the Chips
If you're making house potato chips from scratch, slice the potatoes thinly and soak them in cold water for at least 30 minutes. Drain and pat dry.

Fry the Chips
Heat oil in a deep fryer or large pot to 350°F (175°C). Fry the potato slices in batches until golden brown and crispy, about 3-5 minutes. Remove with a slotted spoon and drain on paper towels. Season with salt to taste.
Assembling the Dish

Slice the Cheese
While the chips are frying, slice the double pepperjack cheese into 1/4 inch thick slices.

Prepare the Peppers
Slice the fresh jalapeños into rings and set aside. Drain the pickled jalapeños if necessary.

Prepare the Lettuce
Wash and dry the butter leaf lettuce leaves, keeping them whole for serving.

Mix the Sauces
In a small bowl, mix together the Carolina Reaper pepper sauce and the chipotle red pepper mayo until well combined.

Assemble the Reaper
On a plate, layer the butter leaf lettuce leaves. Top each leaf with a slice of double pepperjack cheese, a handful of house potato chips, fresh jalapeño slices, and pickled jalapeños. Drizzle the mixed sauces over the top.
