1. Prepare the Potatoes

Wash the Russet potatoes thoroughly under cold water. Peel the potatoes if desired, and then cut them into thin strips or wedges, about 1/4 inch thick.

2. Soak the Potatoes

Place the cut potatoes into a large bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and makes the fries crispier.

3. Drain and Dry

After soaking, drain the potatoes and pat them dry using paper towels or a kitchen towel. Make sure they are as dry as possible to ensure frying effectiveness.

4. Heat the Oil

In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can use a thermometer to check the temperature.

5. Fry the Potatoes

Carefully add the dried potato strips into the hot oil in small batches. Fry for about 5-7 minutes or until they turn golden brown and crispy. Avoid overcrowding the pot.

6. Drain the Fries

Using a slotted spoon, remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil.

7. Season the Fries

While the fries are still hot, sprinkle them with salt, black pepper, garlic powder, and paprika. Toss gently to coat evenly.

8. Garnish and Serve
