Method
Marinating the Chicken

Prepare Marinade
In a large bowl, combine buttermilk, hot sauce, salt, and black pepper. Whisk until well mixed.

Marinate Chicken
Add the boneless chicken thighs to the buttermilk mixture, ensuring they're fully submerged. Cover and refrigerate for at least 2 hours, or overnight for best results.
Breading the Chicken

Prepare Breading
In a separate bowl, mix together all-purpose flour, cornstarch, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.

Bread the Chicken
Remove marinated chicken from the refrigerator. Allow excess marinade to drip off, then dredge each piece in the flour mixture, pressing to adhere. Set aside on a wire rack.
Frying the Chicken

Heat Oil
In a large, deep skillet or fryer, heat oil to 350°F (175°C). Use enough oil to submerge the chicken pieces.

Carefully place chicken pieces into the hot oil, frying in batches if necessary. Cook for about 5-7 minutes per side or until golden brown and cooked through. Use a meat thermometer to ensure internal temperature reaches 165°F (75°C).

Remove chicken from oil and place on paper towels to drain excess oil.
Assembling the Sandwich

In a small bowl, mix together mayonnaise and hot sauce until combined. Adjust spice level to taste.

Spread BOB sauce on the bottom half of the burger buns. Layer with butter leaf lettuce, fried chicken, sliced tomato, and dill pickles. Top with the other half of the bun.
