Method

Hand-Cut House Fries

    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into thick strips to create fries.

    Soak the Fries

    Place the cut fries in a bowl of cold water and soak them for at least 30 minutes to remove excess starch.

    Heat the Oil

    In a large pot, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Remove the fries from the water, pat them dry, and carefully add them to the hot oil in batches. Fry until golden brown, about 5-7 minutes. Remove and drain on paper towels, then sprinkle with salt.

Sweet Potato Waffle Fries

    Prepare the Sweet Potatoes

    Wash and peel the sweet potatoes. Cut them into waffle shapes using a waffle fry cutter.

    Coat with Cornstarch

    Toss the waffle fries in cornstarch to coat them lightly.

    Heat the Oil

    In a separate pot, heat the vegetable oil to 375°F (190°C).

    Fry the Sweet Potato Waffle Fries

    Fry the sweet potato waffle fries in batches until crispy and golden brown, about 4-6 minutes. Drain on a paper towel and sprinkle with salt.

House-Made Potato Chips

    Prepare the Potatoes

    Wash and peel the russet potatoes. Slice them very thinly using a mandoline or a sharp knife.

    In a deep pan, heat the vegetable oil to 375°F (190°C).

    Fry the Potato Chips

    Carefully add the potato slices to the hot oil in small batches. Fry until they are golden and crispy, about 2-4 minutes. Remove and drain on paper towels, then sprinkle with salt.

Dipping Sauces

    Prepare Chipotle-Red Pepper Mayo

    In a bowl, mix mayonnaise with chipotle powder and red pepper flakes. Stir until well combined.
