Using a box grater or food processor, grate the sharp cheddar cheese into a large mixing bowl.

Allow the cream cheese to sit at room temperature for about 15 minutes to soften, making it easier to mix.

In the bowl with the grated cheddar, add the softened cream cheese, pimentos (drained), mayonnaise, hot sauce, garlic powder, onion powder, salt, black pepper, paprika, and cayenne pepper.
