Prepare the Base
In a large mixing bowl, combine the cream cheese, shredded cheddar cheese, and sour cream. Mix until smooth and well blended.

Add Flavorings
Stir in the diced tomatoes with green chiles, chili powder, cumin, garlic powder, salt, and black pepper. If using, finely chop the jalapeño and add it to the mixture for extra heat.

Heat the Dip
Transfer the mixture to a microwave-safe bowl or a small baking dish. Microwave on high for 2-3 minutes, stirring halfway through, until the cheese is melted and the dip is hot. Alternatively, bake in a preheated oven at 350°F (175°C) for 15-20 minutes.

Prepare the Tortillas
Cut the corn tortillas into triangles using a sharp knife or pizza cutter.

Heat the Oil
In a large frying pan, heat the vegetable oil over medium-high heat. You can test if the oil is ready by dropping a small piece of tortilla in; it should sizzle immediately.

Fry the Chips
In batches, add the tortilla triangles to the hot oil. Fry until they are golden brown and crispy, about 2-3 minutes per side. Remove them with a slotted spoon and drain on paper towels.
