Prepare the Crepe Batter
In a mixing bowl, combine rice flour, turmeric powder, salt, and water. Whisk until smooth and let it rest for 30 minutes.

Cook the Crepes
Heat a non-stick skillet over medium heat and add a little vegetable oil. Pour a ladleful of the batter into the skillet, swirling to form a thin layer. Cook for about 2-3 minutes on one side until crispy, then flip and cook for another 1-2 minutes. Repeat with remaining batter.

Prepare the Filling
In another skillet, heat a little oil and sauté mixed vegetables until tender. If using, add shrimp or bacon and cook until done. Season with salt and pepper to taste.

Assemble the Crepes
Place a crepe on a plate, add a portion of the filling, and drizzle with coconut cream. Fold the crepe over the filling.

Serve
Serve the crepes warm with lettuce leaves, fresh herbs, and a side of caramelized sweet chili sauce.
