Prepare the Rice Noodles

Soak the rice noodles in warm water for about 30 minutes until soft, then drain and set aside.

Make the Omelette

Beat the eggs in a bowl and season with a pinch of salt. Heat a tablespoon of cooking oil in a pan over medium heat, pour in the eggs, and cook until set. Remove from heat, roll up the omelette, and slice into thin strips.

Cook the Protein

In the same pan, add another tablespoon of cooking oil, and sauté minced garlic until fragrant. Add your choice of pork belly, shrimp, or fried tofu, cooking until done (about 5-7 minutes).

Combine Ingredients

Add the soaked rice noodles to the pan along with soy sauce and bean sprouts. Stir-fry for another 3-5 minutes until everything is well combined and the noodles are heated through.

Garnish and Serve

Plate the noodles and top with the julienned egg omelette, fresh herbs, crushed peanuts, and a drizzle of chili sauce if desired. Serve warm.
