Prepare the Peppers
Preheat your oven to 400°F (200°C). Slice the tops off the Anaheim peppers and carefully remove the seeds and membranes.

Make the Filling
In a skillet, heat olive oil over medium heat. Add ground pork and cook until browned. Stir in lemongrass, dill, lime leaves, salt, and pepper. Cook for an additional 2-3 minutes until fragrant.

Stuff the Peppers
Fill each Anaheim pepper with the pork mixture, packing it tightly. Place the stuffed peppers upright in a baking dish.

Roast the Peppers
Roast in the preheated oven for 25-30 minutes, or until the peppers are tender and the filling is cooked through.

Serve
Remove from oven and let cool slightly. Serve warm with spicy charred tomato jeow on the side.
