    Prepare the Purple Sticky Rice

    Rinse the purple sticky rice under cold water until the water runs clear. Soak the rice in water for at least 4 hours or overnight. Drain and place the rice in a steamer lined with cheesecloth. Steam for about 30-40 minutes, or until tender.

    Make the Coconut Custard

    In a bowl, combine coconut milk, sugar, eggs, and a pinch of salt. Whisk until well combined. Pour the mixture into a saucepan and cook over medium heat, stirring constantly until it thickens slightly. Remove from heat and let it cool.

    Prepare the Palm Sugar Tamarind Sauce

    In a small saucepan, combine palm sugar, tamarind paste, and a splash of water. Heat over low heat, stirring until the sugar dissolves and the mixture thickens into a syrup. Set aside.

    Assemble the Dessert

    On a serving plate, place a portion of the steamed purple sticky rice. Top with diced fresh mango and drizzle with coconut custard. Finally, drizzle the palm sugar tamarind sauce over the top.
