Prepare the Noodles

Soak the rice noodles in warm water for about 30 minutes or until they are soft, then drain and set aside.

Cook the Tofu

Cut the tofu into small cubes. Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. Add the tofu and cook until golden brown on all sides. Remove and set aside.

Stir-fry the Vegetables

In the same pan, add the remaining tablespoon of oil. Add garlic, carrots, and green onions. Stir-fry for 2-3 minutes until the vegetables are slightly tender.

Add Noodles and Sauce

Add the soaked rice noodles to the pan along with tamarind paste, soy sauce, and paprika. Stir well to combine and cook for about 3-4 minutes.

Add Eggs and Tofu

Push the noodles to one side of the pan, crack the eggs into the empty side and scramble them until cooked. Then, mix in the tofu and bean sprouts.

Finish with Peanuts and Herbs

Remove from heat and stir in chopped cilantro and peanuts. Serve hot with lime wedges on the side.
