Prepare the Jasmine Rice
Rinse the jasmine rice under cold water until the water runs clear. In a pot, add 1 cup of jasmine rice and 1.5 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until the rice is tender. Remove from heat and let it sit covered for 5 minutes.

Make the Sausage Mixture
In a large mixing bowl, combine the ground pork belly, finely chopped lemongrass, minced garlic, chopped shallots, fish sauce, sugar, black pepper, and chopped cilantro. Mix well until all ingredients are evenly incorporated.

Form the Sausages
Take small portions of the sausage mixture and form them into patties or links, as desired. You can also use sausage casings if you prefer traditional sausages.

Cook the Sausages
In a skillet over medium heat, add a little oil. Cook the sausage patties or links for about 6-8 minutes on each side, or until they are golden brown and cooked through.

Serve the Dish
Serve the lemongrass sausages hot with the jasmine rice on the side. Add pickled ginger for garnish and extra flavor.
