    Cook Jasmine Rice

    In a pot, bring 2 cups of water to a boil. Add 1 cup of jasmine rice, reduce heat to low, cover, and simmer for about 15 minutes until rice is tender and water is absorbed. Fluff with a fork and set aside.

    Poach the Eggs

    Bring a pot of water to a gentle simmer. Crack eggs into a small bowl and gently slide them into the water. Poach for about 3-4 minutes until the whites are set but yolks are still runny. Remove with a slotted spoon and set aside.

    Stir-Fry the Vegetables and Protein

    In a large skillet or wok, heat olive oil over medium-high heat. Add minced garlic and sauté for 30 seconds. Then add your choice of beef, shrimp, or tofu, and stir-fry until cooked through, about 5-7 minutes.

    Add Vegetables and Basil

    Add the assorted vegetables to the skillet and stir-fry for another 3-5 minutes until they are tender-crisp. Stir in soy sauce and basil leaves, and cook for an additional minute. Season with salt and pepper to taste.

    Serve

    To serve, place a scoop of jasmine rice on each plate, top with the stir-fried mixture, and finish with a poached egg on top.
