1. Prepare the Ingredients
Make sure all your ingredients are prepped and ready to go. Dice the pork, carrots, and slice the green onions.
2. Cook the Pork
In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the diced pork and cook until browned and cooked through, about 5-7 minutes. Remove and set aside.
3. Stir-Fry the Vegetables
In the same skillet, add the remaining tablespoon of oil. Add the carrots and stir-fry for about 2 minutes. Then add the peas and green onions, cooking for another 2-3 minutes until tender.
4. Add the Rice and Eggs
Add the cooked rice to the skillet and mix well with the vegetables. Push the rice to one side of the skillet and pour the beaten eggs into the empty space. Scramble the eggs until fully cooked, then mix into the rice.
5. Combine Everything
Return the cooked pork to the skillet. Add soy sauce, salt, and black pepper. Stir everything together and cook for an additional 2 minutes until heated through.
6. Serve
